Preparation

  • In a pot, bring salted water to a boil and add the orzo. Cook until al dente, about 8-10 minutes. Drain and set aside.
  • In a large pan, heat olive oil over medium heat. Add minced garlic, and sauté for about 1 minute, until fragrant.
  • Toss in the shrimp and red pepper flakes (if using), cooking until they are pink and opaque, roughly 3-5 minutes.
  • Squeeze in fresh lemon juice and add the zest. Stir well to combine.
  • Add the cooked orzo to the shrimp mixture, and gently toss to combine. Cook for an additional minute.
  • Remove from heat, sprinkle with fresh parsley, and enjoy your dish warm!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For meal prep, consider cooking the orzo and shrimp separately, then combining them on the day you wish to enjoy it.
