Preparation

Cooking

  • Pour in the chicken broth, bringing it to a gentle boil.
  • Add the shredded chicken and fresh spinach to the pot. Allow everything to simmer together for about 5 minutes.
  • Lower the heat and mix in the ricotta cheese and heavy cream until fully incorporated.
  • Stir in the shredded mozzarella, allowing it to melt into the soup.
  • Season with salt and pepper to your preference.
  • Ladle the soup into bowls and finish with an extra sprinkle of mozzarella on top, along with fresh herbs if desired.

Notes

Leftovers can be stored in an airtight container in the fridge for 3-4 days. This soup freezes well; reheat by gently warming on the stove, adding a splash of broth or cream to revive the texture. Consider using fresh herbs and don’t skip the sautéing of the aromatics for added flavor.
