  • 1 can diced green chilies Adds mild heat and depth of flavor.
  • 1 teaspoon ground cumin For that warm, earthy note.
  • 1 teaspoon chili powder A little extra kick!
  • 1 teaspoon paprika For color and smokiness.
  • Salt and pepper to taste Adjust according to preference.
  • 1 cup sour cream or Greek yogurt Low-fat options are great too!
  • Fresh cilantro, for garnish Adds a burst of freshness.

Preparation

  • Heat the oil in a large pot over medium heat.
  • Add the diced onion and sauté until soft and translucent, about 3-4 minutes.
  • Add the minced garlic and sauté for another minute.
  • Stir in the shredded chicken and drained cannellini beans, coating them with the onion and garlic.
  • Pour in the chicken broth, followed by the diced green chilies, cumin, chili powder, paprika, salt, and pepper. Stir well.
  • Bring the mixture to a simmer for about 10 minutes.
  • Reduce heat to low and stir in sour cream until the chili is creamy.
  • Taste and adjust seasonings as needed.
  • Serve immediately, garnished with fresh cilantro.

Notes

Feel free to customize with veggies or spices. This chili is great for leftovers and can be frozen for longer storage.
