Preparation

  • In a large pot over medium heat, add the olive oil and let it warm for a minute.
  • Toss in the chopped onions, carrots, celery, and potatoes. Sauté for about 5–7 minutes until the vegetables start to soften.
  • Push the veggies to the side and add the ground beef. Brown it for about 5 minutes until cooked through, breaking it up into crumbles.
  • Stir in the minced garlic, thyme, salt, and pepper. Cook for an additional minute.
  • Pour in the beef broth and diced tomatoes, stirring everything together.
  • Bring the mixture to a gentle boil, then reduce the heat to low. Allow it to simmer uncovered for 20 minutes, stirring occasionally.
  • Taste the soup and adjust salt and pepper to your liking before serving.
