Preparation

  • Start by seasoning the beef chuck roast with salt and pepper on all sides.
  • In a heated pan, sear the roast on all sides until browned—about 3-4 minutes per side.
  • Place the roast in your slow cooker, and add the chopped onion, garlic, carrots, and potatoes around it.
  • Pour the beef broth and Worcestershire sauce over the top, followed by the thyme and rosemary.
  • Cover and cook on low for 8 hours or high for 4 hours.
  • Once done, serve the roast with the vegetables and a ladle of the savory broth.
