Preparation

  • Season the chuck roast generously with salt and pepper on both sides.
  • In a large skillet, heat the olive oil over medium-high heat and sear the roast for about 4-5 minutes on each side until golden brown.

Cooking

  • Transfer the roast to your slow cooker and layer the chopped carrots, potatoes, sliced onion, and minced garlic around the meat.
  • Gently pour the beef broth over the ingredients, ensuring everything is well-coated. Sprinkle thyme and rosemary on top.
  • Drizzle the Worcestershire sauce over the top.
  • Cover the slow cooker and set it to low for 8 hours or high for 4 hours.

Serving
