  • 2 tablespoons olive oil For searing the roast.
  • 1 large onion, diced Adds sweetness to the dish.

  • 4 carrots, cut into chunks Brings sweetness and color.
  • 4-5 potatoes, cubed Hearty addition that soaks up juices.
  • 2 cups beef broth Keeps everything moist.
  • 1 tablespoon Worcestershire sauce Adds depth of flavor.
  • 1 teaspoon dried thyme For herby freshness.
  • to taste salt and pepper Essential seasoning.

Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium-high heat.
  • Season the chuck roast generously with salt and pepper, then sear on all sides until browned, about 4-5 minutes per side.
  • Place the diced onions, minced garlic, carrots, and potatoes in the bottom of the slow cooker.
  • Lay the seared chuck roast on top of the vegetables.
  • Combine beef broth, Worcestershire sauce, thyme, and any additional seasonings in a bowl, then pour over the roast and vegetables.

Cooking

  • Cover and cook on low for 8 hours, or high for 4 hours, until the roast is fall-apart tender.
  • Lift the roast out and let it rest for a few minutes.
  • Slice and serve with the vegetables and aromatic broth.

Notes

You can swap out chuck roast for brisket or a round roast. Sweet potatoes can replace regular potatoes for added flavor.
