  • 4 pieces salmon fillets (about 6 oz each)
  • 2 tablespoons olive oil for a fruity depth
  • 2 cups spinach leaves fresh is best for vibrant color
  • 1 cup cherry tomatoes cut in halves; sweet and juicy
  • 3 cloves garlic minced; adds aromatic depth
  • ½ cup heavy cream or use Greek yogurt for a lighter option
  • ¼ cup grated Parmesan cheese the secret to a luxurious sauce
  • Salt and pepper to taste
  • Fresh basil to garnish; use it for a garden-fresh finish
  • Red pepper flakes optional, for a little kick

Preparation

  • Season each salmon fillet generously with salt and pepper. Allow them to sit while you prep other ingredients.

Cooking

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not brown.
  • Place salmon fillets in the skillet, skin-side down, and cook for about 5 minutes. Flip the fillets carefully and cook for another 4-5 minutes, or until flaky and cooked to your liking. Remove from skillet and set aside.
  • In the same skillet, add the cherry tomatoes and spinach. Sauté for about 3 minutes until the tomatoes burst and the spinach wilts.
  • Pour in the heavy cream and stir in the grated Parmesan cheese until the sauce thickens. Season with salt, pepper, and red pepper flakes to taste.
  • Return the cooked salmon to the skillet, spoon sauce over each fillet, and cook together for an additional 2 minutes.

Serving

  • Garnish with fresh basil just before serving.

Notes

Store leftovers in an airtight container for up to 2 days. Reheat in a skillet over low heat, adding a splash of cream if needed. Allow salmon to rest before serving for juicier results.
