Preparation

  • Begin by chopping your garlic and dicing the tomatoes.

Cooking

  • In a large pot, bring salted water to a boil and cook your pasta until al dente. Drain and set aside.
  • In the same pot, add olive oil over medium heat. Once hot, sauté the minced garlic until fragrant, about 1 minute.
  • Stir in the drained beans and diced tomatoes, cooking for about 3–4 minutes.
  • Pour in the vegetable broth along with oregano and basil. Bring to a gentle simmer.
  • Add the cooked pasta to the pot and stir to combine, simmering for another 2–3 minutes.
  • Taste and adjust seasoning with salt and pepper. Serve hot, garnished with parmesan if desired.

Notes

You can make substitutions for a gluten-free or vegan option. For a spicy kick, add red pepper flakes, or toss in some fresh spinach for extra nutrients.
