Preparation

  • In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Sauté until browned and cooked through, about 5–7 minutes.
  • Add the diced onion and minced garlic. Cook until the onion becomes translucent, about 3–4 minutes.
  • Pour in the chicken broth, scraping up any browned bits from the bottom of the pot.
  • Bring the broth to a gentle simmer. Add the tortellini and cook according to the package instructions, usually around 3–4 minutes, until they float to the top.
  • Toss in the fresh spinach and let it wilt for about 1–2 minutes.
  • Add Italian seasoning, and season with salt and pepper to taste. Serve hot, garnished with freshly grated Parmesan cheese.

Notes

Feel free to swap spinach for kale, add veggies, or go dairy-free with your cheese. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
