  • 1 pound Italian sausage Use sweet or spicy; can substitute with ground turkey or chicken.
  • 1 12 oz package refrigerated cheese tortellini Frozen tortellini can also be used.
  • 2 cups marinara sauce Homemade or store-bought variety.
  • 1 cup shredded mozzarella cheese Can substitute with provolone or cheddar.
  • ½ cup grated Parmesan cheese Nutritional yeast can be used for a lighter option.
  • 1 whole bell pepper (chopped) Any color bell pepper can be used.
  • 1 small onion (chopped) Shallots can be a great alternative.
  • 2 cloves garlic (minced) Enhances the flavor of the dish.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large skillet over medium heat, brown the Italian sausage, breaking it up with a spatula as it cooks.
  • Add the chopped bell pepper, onion, and minced garlic to the skillet. Stir until the vegetables are softened, about 5 minutes.
  • Pour in the marinara sauce and bring to a simmer.
  • Once the sauce is bubbling, gently fold in the cheese tortellini.
  • Transfer the mixture into a greased 9 x 13-inch baking dish.
  • Top with the shredded mozzarella and grated Parmesan.
  • Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
  • Let it cool for a few minutes before serving.

Notes

Add fresh basil or parsley before serving for added freshness. Incorporate spinach or kale for greens. Consider gluten-free tortellini for dietary restrictions.
