  • 2 cups red enchilada sauce Store-bought or homemade; spicy options available.
  • 2 cups shredded cheese (cheddar or Monterey Jack) Dairy-free cheese is an option.
  • sour cream Substitute with Greek yogurt for a lighter option.
  • fresh cilantro, for garnish Adds freshness to the dish.

Preparation

  • Preheat the oven to 375°F (190°C).
  • Chop onions and mince garlic while the oven warms up.

Cooking

  • In a large skillet over medium heat, add ground beef and cook until browned, about 5-7 minutes.
  • Add the diced onions and sauté until translucent, about 3-4 minutes.
  • Stir in the minced garlic and taco seasoning, cooking for another minute.
  • Warm the tortillas in the microwave for about 30 seconds.
  • Assemble the enchiladas by spooning beef mixture onto a tortilla, sprinkle with cheese, and roll tightly.
  • Place rolled tortillas seam-side down in a baking dish.
  • Repeat until all filling is used.
  • Pour enchilada sauce over rolled tortillas, ensuring all are covered and sprinkle remaining cheese on top.
  • Bake for 20 minutes, or until cheese is melted and bubbly. Optionally, broil for an extra minute.
  • Garnish with sour cream and cilantro before serving.

Notes

Customize your enchiladas with various toppings. For leftovers, cool completely before storing in an airtight container for up to 3 days, or freeze for up to 3 months.
