Preparation

  • Start by rinsing your ribs under cold water and patting them dry with paper towels.
  • Flip the ribs over and carefully take off the thin membrane on the back for extra tenderness.
  • In a bowl, combine brown sugar, paprika, garlic powder, onion powder, salt, and pepper to create the rub.
  • Generously coat your ribs with the seasoning mix, massaging it in to ensure every inch is flavorful.
  • If you have time, let your ribs marinate for at least an hour or overnight in the fridge for deeper flavor.

Grilling

  • While the ribs are marinating, prepare your grill for indirect heat.
  • Place the ribs on the unlit side of the grill bone-side down, close the lid, and cook slowly for about 2-2.5 hours, basting occasionally with barbecue sauce.
  • For the final 10-15 minutes, move the ribs to the hot side, brushing on barbecue sauce for a sticky finish.

Serving

  • Remove the ribs from the grill, letting them rest for a few minutes.
  • Slice, savor, and enjoy!
