Preparation

  • Chop the chicken into bite-sized pieces and season with salt, pepper, paprika, and cumin.

Cooking

  • In a large, non-stick skillet over medium heat, heat olive oil and melt the butter.
  • Add the seasoned chicken pieces and cook for about 5-7 minutes, stirring occasionally until golden brown and cooked through.
  • Add the minced garlic and onion powder, stirring until fragrant, about 1 minute.
  • Lower the heat and pour in the heavy cream, stirring until well combined. Allow to simmer for 3-5 minutes until slightly thickened.
  • Fold in the spinach (if using frozen, ensure it’s thawed first) and cook until wilted.
  • Taste and adjust seasoning if needed, then transfer to serving plates and enjoy.

Notes

Allow the dish to rest for a few minutes post-cooking to let flavors meld. Brighten with lemon juice for enhanced flavor. Use Greek yogurt instead of heavy cream for a lighter version or spice it up with cayenne pepper.
