  • 1 pound ground beef use turkey for a leaner option
  • 1 medium onion, diced for a subtle sweetness
  • 1 can (10.5 oz) cream of mushroom soup or swap for cream of chicken
  • 1 cup shredded cheddar cheese try pepper jack for a kick
  • 1 cup frozen mixed vegetables peas and carrots add color and nutrition
  • 1 bag (32 oz) frozen tater tots the star of the show!
  • Salt and pepper to taste don’t skip this for extra flavor

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, brown the ground beef over medium heat, breaking it apart with a spatula until it’s fully cooked (about 5-7 minutes).
  • Add diced onion to the pan and sauté until translucent, about 3 minutes.
  • Stir in the cream of mushroom soup, mixed vegetables, and a sprinkle of salt and pepper. Mix well until everything is nicely combined, and remove from heat.
  • In a baking dish, spread the beef mixture evenly.
  • Top it generously with an even layer of frozen tater tots.
  • Sprinkle the shredded cheese on top of the tater tots.
  • Bake in the preheated oven for 30 minutes, or until the tater tots are golden brown and crispy.
  • Remove from the oven and let it cool slightly before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Freeze in portions for up to 2 months. When reheating, add a little cheese on top for a melty finish. Browning the beef until caramelized adds depth; don’t rush this step!
