Preparation

  • Slice the Italian sausage into bite-sized pieces and brown them in a skillet.
  • In the bottom of your crockpot, layer the diced tomatoes.
  • Add the sliced peppers and onions on top.
  • Sprinkle the browned sausage over the vegetables.
  • Follow with minced garlic and Italian seasoning.
  • Season with salt and pepper to taste.
  • Stir gently to combine.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours until the vegetables are tender.

Notes

To make this dish even more special, consider adding a splash of balsamic vinegar, swapping the sausage, or using different pepper varieties.
