Noodles and Chicken

Preparation

  • Heat the olive oil or butter in a large pot over medium heat. Add the onion, carrots, and celery and cook until softened, about 5–7 minutes.
  • Add the garlic and cook for 30–60 seconds until fragrant, then stir in the thyme and bay leaves.
  • Pour in the chicken broth and bring to a gentle simmer, scraping any browned bits from the bottom of the pot.
  • Add the shredded chicken and let it warm through for about 5 minutes.
  • Stir in the noodles and cook according to package instructions until al dente.
  • If using, remove the pot from heat and whisk in the sour cream or Greek yogurt, then season with salt, pepper, and lemon juice.
  • Taste and adjust seasoning as necessary.
  • Ladle into bowls, garnish with chopped parsley or chives, and serve immediately.

Notes

Store leftovers in an airtight container for up to 4 days. For longer storage, freeze in portions without dairy and add when reheating.
