  • 1 can (15 oz) diced tomatoes Use fire-roasted for an extra smoky flavor.
  • 1 can (6 oz) tomato paste This thickens the sauce beautifully.
  • 1 packet taco seasoning Opt for homemade seasoning for a healthier twist.
  • 12-15 pieces lasagna noodles No-boil varieties simplify the process.
  • 2 cups shredded cheese (cheddar or Mexican blend) For that melty, cheesy goodness.
  • 1 cup sour cream Greek yogurt works well as a lighter alternative.
  • to taste Fresh cilantro (optional) Adds a refreshing touch at the end.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, add the ground beef and chopped onion. Cook until the beef is browned, breaking it up with a spoon, about 5-7 minutes.
  • Stir in the minced garlic and taco seasoning. Sauté for another minute until the garlic becomes fragrant.
  • Pour in the diced tomatoes (with juices) and tomato paste. Add the black beans, stirring well. Allow the mixture to simmer for about 5-10 minutes until it thickens nicely.

Layering and Baking

  • In a 9x13 inch baking dish, spread a thin layer of the beef mixture on the bottom.
  • Place 3-4 lasagna noodles over the meat. Spread a generous dollop of sour cream and a sprinkle of cheese on top. Repeat the layering process until all ingredients are used.
  • Finish with a layer of cheese on top.
  • Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
  • Remove the foil for the last 10 minutes, allowing the cheese to bubble and turn golden.
  • Remove from the oven and let it sit for 10 minutes before slicing.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3-4 days, or you can freeze them. To reheat, place in the oven at 350°F (175°C) until warmed through, about 20-25 minutes.
