Preparation

  • Preheat your oven to 400°F (200°C). While it’s heating, prepare your ingredients.
  • In an ovenproof skillet, heat the olive oil over medium heat. Add the diced onions and cook until translucent, about 3-5 minutes. Then add the diced sweet potatoes, seasoning with salt and pepper, and cook until they are tender, about 10 minutes.
  • In a bowl, whisk together the eggs, a pinch of salt, and pepper until well combined and slightly frothy.
  • Stir in the spinach and feta cheese into the sweet potato mixture, then pour the egg mixture on top.
  • Allow the frittata to cook undisturbed for about 5 minutes on the stovetop.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and golden on top.
  • Let it cool slightly, slice into wedges, and serve warm.

Notes

You can make it ahead! Simply follow all the steps up to baking, then cover it tightly and refrigerate. Bake it fresh just before serving for maximum flavor. Store leftovers in the refrigerator for up to 3 days. Reheat in the microwave or oven.
