Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Peel and chop the sweet potatoes. Boil them in a large pot of water until tender, around 15-20 minutes.
  • Drain the sweet potatoes and transfer them to a large mixing bowl. Mash until smooth.
  • Add brown sugar, milk, butter, eggs, vanilla extract, cinnamon, and nutmeg. Mix well until fully combined.
  • Spoon the mixture into a greased casserole dish and spread evenly.

Baking

  • If using, sprinkle marshmallows atop the sweet potato mixture.
  • Bake in the preheated oven for 30 minutes or until heated through and marshmallows are golden brown.
  • Remove from the oven and let it cool slightly before serving.

Notes

Use different nuts for crunch, add orange zest for a twist, or include maple syrup for deeper sweetness. Store leftovers in an airtight container in the fridge for up to 3 days.
