Preparation

  • In a large bowl, beat the softened unsalted butter until it is light, pale, and fluffy—about 2 minutes.
  • Gradually add the sifted powdered sugar, one cup at a time, mixing on low to avoid a sugar cloud. After two cups, increase the speed for a smoother texture.
  • Add the vanilla extract, a pinch of salt, and 2 tablespoons of milk or cream. Beat until combined.
  • If the frosting is too thick, add more milk, a teaspoon at a time, until you reach the perfect spreadable consistency.
  • Taste a tiny bit—if it feels flat, add a tiny splash of lemon juice to brighten it.
  • If you want deeper flavor, a few drops of almond extract will create a festive meal-worthy variation.
  • Divide into bowls if you plan multiple colors. Gel food coloring works best for vibrant hues without watering down the frosting.
  • Pipe, swirl, or spread over cooled sugar cookies and sprinkle with your favorite decorations.

Notes

Refrigerate frosted cookies for up to 4 days. Unfrosted cookies freeze well and can be thawed at room temperature. The frosting can be stored in a sealed jar in the refrigerator for up to a week.
