Ingredients
  

Meat and Filling

  • 1.5 pounds ground beef or a blend of ground turkey and beef For a healthier option
  • 1 cup fresh breadcrumbs Substitute with oats for a gluten-free option
  • 1 cup shredded mozzarella cheese The gooier, the better!
  • 0.5 cup grated Parmesan cheese For a flavorful punch
  • 2 cloves garlic, minced Fresh garlic adds depth
  • 1 small onion, finely chopped Shallots can be used for a milder flavor
  • 1 large egg For binding
  • 2 tablespoons fresh parsley, chopped Substitute with basil for a fresher taste
  • 1 teaspoon Italian seasoning A must for that classic flavor
  • 1.5 cups marinara sauce Homemade or store-bought will work
  • to taste salt and pepper

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, mix the ground beef, breadcrumbs, mozzarella, Parmesan, garlic, onion, egg, parsley, Italian seasoning, salt, and pepper until well combined.
  • Transfer the meat mixture onto a sheet of parchment paper and shape it into a rectangle, about 1-inch thick.
  • Sprinkle the remaining mozzarella cheese down the center of the meatloaf, then lift the edges of the parchment and roll it up like a jelly roll, sealing the edges.

Cooking

  • Place the stuffed meatloaf seam-side down in a greased baking dish.
  • Pour half a cup of marinara sauce over the top.
  • Bake for 30 minutes or until the internal temperature reaches 160°F (70°C).
  • Allow the meatloaf to rest for about 10 minutes before slicing.

Notes

Storage: Wrap individual slices in plastic wrap or place in an airtight container; lasts up to 3 days in the fridge. For freezing, wrap well to prevent freezer burn and store for up to 3 months. Reheat at 350°F (175°C) for about 15 minutes.
