  • 2 cups Coconut Milk Opt for light coconut milk for a lighter alternative.
  • 2 cups Fresh Strawberries Sweet, ripe berries are essential; feel free to use frozen if fresh isn’t available.
  • 1/2 cup Sugar Adjust to taste; honey or maple syrup could also be substitutes.
  • for soaking sago Water Simple, but necessary to prepare the pearls before cooking.
  • 1 teaspoon Vanilla Extract Adds a lovely depth of flavor; substitute with almond extract for a nutty twist.

Preparation

  • Soak the sago pearls in water for about 30 minutes until they become plump.
  • After soaking, drain the pearls and transfer them to a pot with 3 cups of water. Bring to a gentle boil, stirring frequently, and cook for about 15 minutes until the sago is transparent.
  • In a separate saucepan, combine coconut milk and sugar over low heat, stirring until the sugar dissolves.

Combine and Cook

  • Once the sago is ready, drain any excess water and stir the pearls into the coconut milk mixture. Simmer for another 5 minutes on low heat while stirring continuously.
  • Fold in the chopped fresh strawberries and vanilla extract, allowing the juices to mingle with the creamy sago.

Final Touch

  • Transfer the mixture into serving cups or bowls. Refrigerate for at least 2 hours until chilled and set.

Notes

For a tropical twist, add diced mango or pineapple; for a dairy-free version, ensure your sugar is vegan-friendly.
