Ingredients

For the Roll-Ups

  • 8 slices Bread Use white or whole wheat; day-old bread works best.
  • 4 oz Cream Cheese Adds a rich, creamy texture. Swap with mascarpone for a different flavor.
  • 2-3 tbsp Powdered Sugar Sweetens the cream cheese.
  • 1 tsp Vanilla Extract Enhances flavor; can use almond extract.
  • 1/2 cup Milk Use whole or dairy-free alternatives like almond milk.
  • 2 large Eggs The binding agent for the roll-ups.
  • 1 cup Strawberries, sliced Fresh or frozen; thaw and drain frozen strawberries.
  • Butter For grilling; coconut oil can be used for a vegan option.

Instructions

Preparation

  • In a bowl, blend the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Using a rolling pin, gently flatten each slice of bread.
  • Spread a generous tablespoon of the cream cheese mixture on each slice, add a few slices of strawberries, and roll them up tightly, sealing the edges.
  • In a shallow bowl, whisk together the eggs and milk to create an egg wash.
  • Dip each roll in the egg mixture, ensuring they are well-coated.

Cooking

  • In a skillet over medium heat, melt butter and grill the roll-ups until golden brown on each side, about 2-3 minutes per side.
  • Plate the roll-ups and drizzle with maple syrup, adding fresh strawberries and whipped cream on top.

Notes

For variations, swap strawberries for other berries, add chocolate sauce, or use Greek yogurt instead of cream cheese. Store leftovers in the refrigerator for up to 2 days.
