Ingredients

Noodles

  • 12 ounces noodles (lo mein, ramen, or spaghetti) the chewy noodles soak up sauce beautifully.

Chicken

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces thighs stay juicy; use breasts if you prefer a leaner option.

Cooking Oils and Sauces

  • 3 tablespoons vegetable oil for searing and creating that sticky crust.
  • 1/4 cup low-sodium soy sauce balances salty and savory.
  • 3 tablespoons honey or maple syrup gives the dish its signature sticky shine.
  • 2 tablespoons rice vinegar brightens and cuts through richness.
  • 1 tablespoon toasted sesame oil for that warm, nutty finish.
  • 1 teaspoon cornstarch mixed with 2 tablespoons water thickens the glaze into a clingy sauce.

Vegetables and Garnishes

  • 6 large cloves garlic, finely minced the star of the show; more if you are a garlic lover.
  • 2 scallions, sliced for color and freshness.
  • sesame seeds and chili flakes, optional for garnish and heat.

Instructions

Preparation

  • Bring a large pot of salted water to a boil and cook the noodles until just al dente. Drain and toss with a little oil to prevent sticking.

Cooking Chicken

  • Heat 2 tablespoons of oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer and sear until golden and cooked through, about 4–5 minutes. Remove and set aside.

Making the Sauce

  • Add the remaining tablespoon of oil to the pan. Reduce heat to medium, add the minced garlic, and cook until fragrant and sweet.
  • Pour in the soy sauce, honey, and rice vinegar. Stir and let the mixture bubble gently for a minute, then add the cornstarch slurry. Watch as the sauce thickens and becomes glossy and sticky.

Combining Ingredients

  • Return the chicken to the pan and toss to coat. Add the cooked noodles and drizzle with sesame oil. Toss until every strand is lacquered with sauce and the chicken is nestled between chewy bites.

Serving

  • Finish with sliced scallions, a sprinkle of sesame seeds, and a pinch of chili flakes if you like heat. Serve immediately.

Notes

For variations, make it vegetarian by swapping chicken for tofu, or add vegetables like snap peas for color. Use smoked paprika for a smoky twist or finish with toasted pine nuts for a festive upgrade.
