  • 12 ounces noodles (lo mein, spaghetti, or rice noodles) Pick your favorite type.
  • 1 pound boneless skinless chicken thighs, thinly sliced Thighs stay juicier; can swap for chicken breast.
  • 4 tablespoons vegetable oil Or use avocado oil for a higher smoke point.
  • 6 to 8 cloves garlic, minced Garlic powder can be used in a pinch.
  • 1/3 cup soy sauce Use low-sodium if preferred.
  • 1/4 cup honey or maple syrup Honey gives a classic sticky finish.
  • 2 tablespoons rice vinegar Or use apple cider vinegar as a substitute.
  • 1 tablespoon sesame oil Optional, but adds a toasty finish.
  • 1 teaspoon cornstarch mixed with 1 tablespoon water For glossy sauce thickening.
  • 1 cup sliced bell peppers Add any quick-cooking veggie.
  • 1 cup shredded carrots Quick cooking vegetables recommended.
  • 2 green onions sliced For garnish, optional.
  • optional sesame seeds For a festive crunch.

Instructions
 

Preparation

  • Bring a large pot of salted water to a boil and cook the noodles according to package instructions until al dente. Drain and toss with a little oil to keep them from sticking.
  • In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, and the cornstarch slurry. Set aside.

Cooking

  • Heat a large skillet or wok over medium-high heat with 2 tablespoons of oil. Add the sliced chicken in a single layer and sear until browned and cooked through, about 4 to 6 minutes. Remove the chicken to a plate.
  • Add the remaining 2 tablespoons of oil to the pan. Toss in the minced garlic and cook for 30 seconds until fragrant.
  • Stir in the bell peppers and carrots and cook for 2 to 3 minutes until just tender but still bright.
  • Return the chicken to the pan, pour the prepared sauce over everything, and stir. As the sauce heats, it will bubble and thicken.
  • Add the cooked noodles to the skillet and toss vigorously to combine until everything is sticky and shiny, then remove from heat.

Serving

  • Finish with sliced green onions and a sprinkle of sesame seeds. Serve immediately.

Notes

Dry your chicken well before searing for better caramelization. Use high heat for quick searing and to keep vegetables crisp. Cornstarch slurry is key for that glossy sauce; don't skip it. Prep ingredients ahead to make this a true 30-minute dinner.
