  • 1 pound Fresh Spinach Substitute with frozen spinach if necessary.
  • 3 tablespoons Butter Feel free to use olive oil for a lighter version.
  • 3 cloves Garlic, minced Fresh is best for aroma; can use garlic powder.
  • 1 cup Heavy Cream Substitute with half-and-half for a lighter option.
  • ½ cup Parmesan Cheese, grated Substitute with Pecorino Romano for a sharper taste.
  • a pinch Nutmeg Optional but recommended to enhance flavors.
  • Salt and Pepper to taste Essential for bringing all the flavors together.

Preparation

  • Wash and chop the fresh spinach. If using frozen, let it thaw and drain well.
  • In a large skillet, melt the butter over medium heat and add minced garlic. Sauté until fragrant, about 1–2 minutes.

Cooking

  • Stir in the fresh spinach; it will wilt down quickly in about 3–4 minutes. If using frozen, heat until warmed through.
  • Once the spinach is wilted, gently pour in the heavy cream. Stir and let bubble gently for 2–3 minutes.
  • Mix in grated Parmesan, nutmeg, salt, and pepper until combined and creamy.
  • If desired, allow the mixture to simmer for a few extra minutes to thicken.
  • Transfer to a serving dish and serve warm.

Notes

Add a dash of hot sauce or red pepper flakes for extra spice. Consider incorporating toasted pine nuts or almonds for a nutty crunch. For a lighter version, Greek yogurt can replace heavy cream.
