Preparation

  • In a large pot, heat a splash of oil over medium heat. Add the diced onions, carrots, and celery, and sauté until they become soft, about 5-7 minutes.
  • Stir in the garlic and cook for another minute until fragrant.
  • Add in your split peas, ham, bay leaves, thyme, and broth. Stir to combine.

Cooking

  • Bring the mixture to a boil, then reduce the heat to a gentle simmer. Cover and cook for about 1 hour, stirring occasionally.
  • Remove the bay leaves and season with salt and pepper to taste.
  • For an extra creamy soup, blend a portion using an immersion blender or standard blender (be cautious with hot liquids!).

Serving

  • Serve warm, garnished with fresh herbs if desired, and enjoy.

Herb Lovers: Feel free to add additional herbs like rosemary or parsley for a flavor twist. Vegetarian Option: Substitute the ham with smoked paprika and use vegetable broth.
