  • 4 pieces Boneless, skinless chicken breasts
  • 2 cups Fresh spinach
  • 8 oz Cream cheese Can be swapped with ricotta or cottage cheese for a lighter option.
  • 1 cup Shredded mozzarella cheese
  • 1/4 cup Grated Parmesan cheese
  • 2 cloves Garlic, minced
  • 2 tbsp Olive oil Used for sautéing and frying.
  • to taste Salt and pepper

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet over medium heat, add a drizzle of olive oil and the minced garlic. Sauté for about a minute until fragrant.
  • Add the fresh spinach to the skillet and cook until wilted. Remove from heat and let cool slightly.
  • In a bowl, combine the cooked spinach, cream cheese, shredded mozzarella, and grated parmesan. Mix until well-blended, and season with salt and pepper to taste.
  • Place the chicken breasts on a cutting board and carefully create a pocket in each breast.
  • Spoon the creamy spinach mixture into each pocket, securing with toothpicks if necessary.
  • Heat more olive oil in the skillet over medium-high heat and sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
  • Transfer the chicken to a baking dish and bake for 25-30 minutes, or until the chicken is fully cooked.
  • Let the chicken rest for a few minutes before serving.

Notes

These stuffed chicken breasts can be stored in an airtight container in the fridge for up to 3 days. They reheat well in the oven or microwave. Feel free to customize with different cheeses or herbs!
