Ingredients
  

Pasta

  • 8 ounces elbow macaroni or your favorite pasta

Sauce Base

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk can use almond milk for a dairy-free option

Cheeses

  • 2 cups shredded sharp cheddar cheese
  • 1 cup crumbled blue cheese optional, for that true Buffalo flavor

Flavorings

  • 1/2 cup Buffalo sauce adjust according to your heat preference
  • Salt and pepper to taste
  • Green onions for garnish

Preparation

  • In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
  • In the same pot, melt the butter over medium heat. Once melted, whisk in the flour until smooth, cooking for about 1-2 minutes.
  • Gradually add the milk, whisking constantly until the mixture thickens and bubbles.
  • Lower the heat and stir in the cheddar cheese and blue cheese (if using) until melted and creamy.
  • Pour in the Buffalo sauce, mixing well. Taste and season with salt and pepper to your liking.
  • Add the cooked pasta to the cheese sauce, stirring to coat every piece.
  • Dish out your Spicy Buffalo Mac and Cheese, garnishing with sliced green onions.

Notes

For variations, consider adding shredded chicken, diced tofu, or sautéed vegetables. Store leftovers in an airtight container for up to 3 days.
