Pasta and Main Ingredients

  • 8 ounces spaghetti Any pasta will work, but spaghetti adds a lovely texture.
  • 4 slices thick-cut bacon For smoky flavor; turkey bacon can be used for a lighter option.
  • 2 cups fresh cherry tomatoes Add sweetness; can substitute with canned diced tomatoes if needed.
  • 2 cloves garlic, minced Fresh garlic is preferable; pre-minced works in a pinch.
  • 1 teaspoon red pepper flakes Adjust to your spice preference.
  • 1/4 cup fresh basil, chopped Adds freshness; dried basil can work too.
  • Salt and pepper to taste Essential for balancing flavors.
  • 2 tablespoons olive oil Extra virgin preferred for a more robust taste.
  • to taste Grated parmesan cheese for serving Elevates every bite.

Instructions

Cooking the Pasta

  • Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente. Drain, but reserve about 1 cup of the pasta water.

Sizzling the Bacon

  • In a large skillet over medium heat, add the bacon. Cook until crispy, about 5-7 minutes. Remove the bacon, leaving the rendered fat in the pan.

Sautéing the Garlic

  • In the same skillet, add the garlic to the bacon fat. Sauté for 1-2 minutes, stirring constantly until fragrant but not browned.

Adding the Tomatoes

  • Throw in the cherry tomatoes and sprinkle with salt, pepper, and red pepper flakes. Cook for about 5 minutes until the tomatoes soften and start to burst.

Combining the Ingredients

  • Crumble the cooked bacon back into the skillet, add the drained pasta, and toss everything together. If the dish looks dry, gradually add reserved pasta water until you reach your desired consistency.

Final Touch

  • Remove from heat, stir in the chopped basil, and let the flavors meld for a minute.

Serving

  • Dish your Spicy Bacon Tomato Pasta onto plates or into bowls, topping with freshly grated parmesan cheese.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. To reheat, warm gently on the stove over low heat, adding a splash of water or olive oil.
