Preparation

  • Pat the chicken breasts dry with paper towels to achieve a golden crust.
  • In a small bowl, mix together the paprika, cumin, garlic powder, onion powder, cayenne pepper, salt, and pepper.
  • Drizzle olive oil over the chicken breasts and rub the spice mixture all over for even coverage. Marinate for 10-15 minutes if possible.

Cooking

  • Preheat the grill to medium-high heat, around 375°F.
  • Place the chicken on the grill and cook for 5-6 minutes per side, or until the internal temperature reaches 165°F.
  • Squeeze fresh lemon juice over the chicken as soon as you take it off the grill for a zesty finish.
  • Let the chicken rest for a few minutes before slicing.

Notes

For extra flavor, try adding fresh herbs to the spice rub or experiment with a spicy citrus marinade. Store leftover chicken in an airtight container for up to 3 days or freeze for 3 months.
