Ingredients

Main Ingredients

  • 4 pieces boneless, skinless chicken breasts A lean protein, easy to cook and pairs wonderfully with Tuscan flavors.
  • 1 cup low-sodium chicken broth Enhances the chicken's juiciness while keeping the dish healthy.
  • 1 cup sun-dried tomatoes Adds a tangy sweetness—opt for oil-packed for extra flavor and moisture.
  • 2 cups fresh spinach Choose organic for the freshest taste; it wilts down beautifully during cooking.
  • 1 cup heavy cream (or Greek yogurt for a lighter option) For that luxurious creaminess that envelopes the chicken.
  • 2 cloves fresh garlic, minced A must-have for depth and aroma—fresh is best.
  • 1 teaspoon Italian seasoning A blend of herbs that captures the essence of Tuscany.
  • Salt and pepper to taste Essential for bringing all the flavors together.
  • Fresh basil, for garnish Adds a pop of green and freshness at the end.

Instructions

Preparation

  • Place the chicken breasts at the bottom of the slow cooker. Season with salt and pepper, ensuring each piece is coated evenly.
  • In a mixing bowl, combine the chicken broth, sun-dried tomatoes, garlic, and Italian seasoning. Pour this mixture over the chicken, making sure each piece is submerged in the fragrant liquid.

Cooking

  • Close the lid and set your slow cooker on high for 4 hours or on low for 6 hours. This is when the magic happens, and your kitchen will start smelling divine!
  • About 30 minutes before the cooking time ends, stir in the heavy cream (or Greek yogurt) and toss in the fresh spinach. Watch as the vibrant greens wilt into the sauce, creating a beautiful color and texture.

Serving

  • Once cooked, use tongs to remove the chicken from the pot. You can shred it with two forks or serve the breasts whole, draping the creamy sauce and spinach over the top.

Notes

Healthier swaps include replacing heavy cream with Greek yogurt or cashew cream. In spring, consider adding asparagus; in winter, Brussels sprouts. A sprinkle of red pepper flakes can add a lovely kick.
