Main Ingredients

  • 4-6 pieces Chicken Breasts, boneless and skinless Substitute thighs for a richer flavor.
  • 1 cup Sun-Dried Tomatoes, packed in oil Use tender sun-dried tomatoes; hydrate dry ones in boiling water.
  • 2 cups Spinach, fresh Frozen spinach can be used as a substitute.
  • 8 oz Cream Cheese Swap in Greek yogurt for a lighter version.
  • 4 cloves Garlic, minced Fresh garlic is best for flavor.
  • 2 tsp Italian Seasoning Experiment with oregano or thyme for extra flavor.
  • 1 cup Chicken Broth Homemade broth enhances the dish.
  • 1 cup Parmesan Cheese, grated Pecorino can also be delightful.
  • 2 tbsp Olive Oil Use for sautéing garlic or drizzling on top.
  • Salt and Pepper To taste.

Preparation

  • Season the chicken breasts with salt and pepper and lay them at the bottom of the slow cooker.
  • Sprinkle minced garlic and sun-dried tomatoes over the chicken.
  • In a bowl, mix the cream cheese and chicken broth until smooth; pour this mixture over the chicken.
  • Top everything with fresh spinach.
  • Sprinkle Italian seasoning on top and drizzle olive oil over the contents.

Cooking

  • Cover your slow cooker and set it to low. Cook for 6-8 hours.
  • Half an hour before serving, stir in the grated Parmesan cheese.
  • Once cooked, shred the chicken with two forks in the slow cooker and stir everything together before serving.

Notes

For serving, enjoy over rice, pasta, or quinoa. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months. Reheat gently and add broth or cream to maintain texture.
