  • Season the chicken breasts generously with salt and pepper. Place them at the bottom of the slow cooker.
  • Scatter the sun-dried tomatoes over the chicken, ensuring they’re evenly distributed for maximum flavor.
  • In a medium bowl, whisk together the heavy cream, Parmesan cheese, minced garlic, and Italian seasoning. Pour this velvety mixture over the chicken and tomatoes.
  • Cover the slow cooker and set it to low for 6 hours or high for 3 hours. You’ll know it’s ready when the chicken is tender and shreds effortlessly with a fork.
  • Once done, give the dish a gentle stir, allowing the chicken to absorb the creamy sauce. You’ll notice the sauce thickening beautifully.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. They also freeze beautifully for up to three months. When reheating, do so gently on the stove over low heat or microwave in short bursts, stirring occasionally, to keep that luscious sauce from separating.
