  • 4 pieces boneless, skinless chicken breasts Feel free to use thighs for a richer flavor.
  • 1 cup sun-dried tomatoes Oil-packed varieties add extra flavor.
  • 3 cloves fresh garlic Minced, for added depth.
  • 1 cup chicken broth Homemade gives the best flavor.
  • 1 teaspoon dried basil A classic Italian herb.
  • 1 teaspoon dried oregano Provides an earthy tone; fresh works too.
  • 1 cup spinach Nutrient-rich greens.
  • ¾ cup heavy cream or Greek yogurt Greek yogurt is a great lower-fat alternative.
  • to taste Salt and pepper Important for flavor.

Preparation

  • Season the chicken breasts with salt and pepper and place them at the bottom of the slow cooker.
  • Layer the sun-dried tomatoes and minced garlic on top of the chicken.
  • Pour in the chicken broth, and add the dried basil and oregano.

Cooking

  • Cover the slow cooker and set it to low for 6-8 hours or high for 4 hours.
  • About 30 minutes before serving, stir in the spinach and cream (or Greek yogurt).
  • Once cooked, shred the chicken directly in the slow cooker and mix everything to coat in the sauce.

Notes

For lighter options, substitute half the heavy cream with Greek yogurt. Consider adding fresh zucchini or cherry tomatoes in summer. A splash of white wine can also elevate the dish.
