Preparation

  • Season the chuck roast generously with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until it’s deeply browned (about 4-5 minutes per side).
  • Place the chopped onion, carrots, and potatoes in the slow cooker. Lay the seared roast on top.
  • Sprinkle the minced garlic over the roast, then pour the beef broth and Worcestershire sauce around it.
  • Cover the slow cooker, set it to low for 8 hours, or high for 4 hours.

Serving

  • Once done, shred the roast with two forks, allowing it to soak up the flavorful juices. Serve with vegetables and sauce.

Notes

Leftovers can be stored in an airtight container for up to 3 days. You can freeze it for up to 3 months. Stir in sour cream for a creamy finish or add red pepper flakes for a spicy kick. Avoid lifting the lid during cooking for best results.
