Preparation

  • Begin by slicing your onion and apples, mincing the garlic, and trimming any excess fat from the pork loin.
  • If you have a few extra minutes, sear the pork loin in a hot skillet until browned on all sides. This adds extra flavor but isn’t necessary if you’re short on time.
  • In your slow cooker, place the sliced onions at the bottom, followed by the pork loin. Top with the apples and sauerkraut.
  • Sprinkle the minced garlic, caraway seeds, salt, and pepper on top. Pour the chicken broth over everything.
  • Cover and cook on low for 6-8 hours or high for 4-5 hours.

Serving

  • Once done, check that the pork is tender and fully cooked (internal temperature should reach 145°F). Shred the pork if desired, and serve warm.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. This dish freezes well; let it cool completely before storing in freezer-safe bags or containers. Always use enough chicken broth to prevent the meat from drying out.
