  • 1 tablespoon olive oil Extra virgin for flavor; you can use avocado oil if preferred.
  • 1 teaspoon dried thyme Or fresh thyme if available to elevate the dish.
  • 1 teaspoon dried rosemary This provides a comforting, earthy taste.
  • 1 teaspoon salt Adjust to your taste preference.
  • 1/2 teaspoon black pepper Freshly cracked is best for aroma.

For the Rice

  • 2 cups long-grain rice White rice cooks perfectly fluffy; swap for brown rice for a healthier option.
  • 4 cups water or more chicken broth (for cooking rice) Use broth for extra flavor.

Preparation

  • Place the chicken breasts in your slow cooker and drizzle with olive oil, making sure to coat them evenly.
  • In a bowl, whisk together the lemon juice, zest, garlic, thyme, rosemary, salt, and pepper. Pour this mixture over the chicken.
  • Gently pour in the chicken broth, ensuring the chicken is submerged slightly beneath the liquid.

Cooking

  • Cover and cook on low for 6 hours or high for 4 hours, until the chicken is tender.
  • About 30 minutes before the chicken is done, combine the rice and water (or broth) in a pot. Bring to a boil, reduce to a simmer, cover, and let it cook until fluffy.
  • Once the chicken is cooked, carefully remove it and shred it with two forks, then return to the slow cooker.

Serving

  • Serve the lemon herb chicken over the fluffy rice and spoon the sauce over the top.

Notes

Swap quinoa for rice for a healthy alternative, or try cauliflower rice for a low-carb option. For more flavor, marinate the chicken overnight in the lemon mixture if time allows.
