Instructions
 

Preparation

  • Season the chicken breasts with salt and pepper on both sides and place them in the slow cooker.
  • In a bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, thyme, and oregano.
  • Pour the uncooked rice over the chicken in the slow cooker.
  • Gently pour the chicken broth into the cooker, ensuring the rice is submerged but not stirred.

Cooking

  • Place the lid on and set the slow cooker to low for 6-8 hours or high for 3-4 hours.

Serving

  • Once cooked, use two forks to shred the chicken within the pot, then fluff the rice gently to combine everything together.
  • Sprinkle freshly chopped parsley on top for a pop of color and freshness.

Notes

Store leftovers in an airtight container in the fridge for up to three days. For longer storage, freeze individual portions for quick meals later. To reheat, thaw in the fridge overnight and warm in the microwave or on the stove, adding a sprinkle of fresh herbs to revive the flavors.
