  • 2 lbs Chicken Thighs Use bone-in or boneless.
  • 4 cloves Garlic Fresh cloves are recommended.
  • 2 whole Lemon Fresh lemons for zest and juice.
  • 2 tbsp Olive Oil Can be substituted with melted butter or avocado oil.
  • 1 cup Chicken Broth Replace with vegetable broth for a lighter version.
  • 1 tbsp Fresh Parsley Can use dried herbs if fresh isn’t available.
  • 1 tbsp Fresh Thyme Can use dried herbs if fresh isn’t available.

Instructions
 

Preparation

  • Pat the chicken thighs dry and season generously with salt and pepper. Place them in the slow cooker.
  • In a small pan, heat olive oil over medium heat. Add the minced garlic, cooking until fragrant (about 1 minute).
  • Squeeze fresh lemon juice directly into the pan with the garlic. Add a splash of chicken broth and stir.
  • Pour the lemon-garlic mixture over the chicken in the slow cooker. If you have fresh herbs, sprinkle them on top.
  • Pour the remaining chicken broth into the slow cooker, covering the chicken completely.

Cooking

  • Cover and cook on low for 6 hours or high for 3. The flavors deepen beautifully as the chicken stews away.
  • Once cooked, remove the chicken and shred it with two forks, then return it to the sauce to soak in flavors before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Can also freeze in sauce for up to three months.
