Preparation

  • Season the beef cubes generously with salt and pepper.
  • In a large skillet over medium-high heat, sear the beef in a tablespoon of butter in batches until browned on all sides. Transfer to the slow cooker.
  • In the same skillet, reduce heat to medium, add the remaining butter, and sauté the minced garlic until fragrant and slightly golden (about 1 minute). Spoon the garlic and butter over the beef in the slow cooker.
  • Pour beef broth, Worcestershire sauce, and soy sauce over the beef. Sprinkle the Italian seasoning and smoked paprika, stir gently to combine.

Cooking

  • Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours, until the beef is fork-tender and the kitchen smells irresistible.
  • About 15 minutes before serving, mix the cornstarch slurry and stir it into the slow cooker to thicken the sauce. Taste and adjust seasoning with salt and pepper.
  • Sprinkle chopped parsley over the beef bites and serve hot, delighting in the silky sauce and tender beef.

Notes

For substitutions: Use ghee instead of butter for a nutty flavor, or swap beef for cubed boneless pork shoulder for a different yet delicious option. For creaminess, stir in 1/4 cup of heavy cream at the end. For a lighter option, serve over spiralized veggies.
