  • 2 lbs Boneless Chicken Thighs Substitute with chicken breasts if preferred for a leaner option.
  • 1 large Onion, diced Yellow or red onions work well.
  • 4 cloves Garlic, minced Fresh is best, but pre-minced can be used.
  • 1 tbsp Ginger, minced Fresh ginger preferred; can substitute with ground ginger.
  • 28 oz Canned Diced Tomatoes Fire-roasted tomatoes add extra flavor.
  • 1 can Coconut Milk, full-fat Can use almond milk for a lighter option.
  • Spices (ground cumin, coriander, turmeric, garam masala, cayenne pepper) Use to taste.
  • 1 cup Greek Yogurt Can substitute with coconut yogurt for dairy-free.
  • Salt and Pepper To taste.

Preparation

  • Start by dicing the onion, mincing the garlic and ginger, and measuring out your spices.

Cooking

  • Place the diced onion at the bottom of the slow cooker.
  • Add the minced garlic and ginger, followed by the chicken thighs, diced tomatoes, coconut milk, and spices.
  • Gently mix all the ingredients together to ensure the chicken is well-coated.
  • Cover and cook on low for 4-6 hours or on high for 2-3 hours.
  • About 30 minutes before serving, stir in the Greek yogurt.
  • Taste and adjust seasoning with salt, pepper, and additional cayenne if desired.

Serving

  • Serve over hot rice, with naan, or as is.

Notes

Add vegetables like spinach or peas during the last half hour for added nutrition. To make it spicy, increase the cayenne or add fresh chopped green chilies. For a vegetarian twist, replace chicken with chickpeas or your choice of vegetables.
