Preparation

  • In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, dill, salt, and black pepper. Stir until silky and aromatic.

Shredding Chicken

  • Remove skin if desired and pull the meat into bite-sized pieces. Warm it slightly if you prefer a contrast of warm chicken and cool dressing.

Combine Ingredients

  • In a large bowl, combine shredded chicken, cherry tomatoes, red onion, and capers.
  • Pour the tzatziki over the top and fold gently until everything is evenly coated.

Serving

  • If using greens, toss the salad lightly into the leaves. For sandwiches, pile onto pita or toast and drizzle any leftover dressing over the top.
  • Taste and adjust by adding more lemon or salt, or a pinch of smoked paprika for a subtle, toasty lift.
