Preparation

  • In a large pot over medium heat, cook the ground beef until browned, about 5 minutes.
  • Add the chopped onion and garlic, stirring until softened, about 3 more minutes.
  • Toss in the diced bell pepper and frozen corn, stirring for another 2 minutes.
  • Pour in the diced tomatoes, beef broth, and taco seasoning. Stir to combine.
  • Bring the mixture to a gentle boil, then add the elbow macaroni.
  • Reduce the heat and cover, letting it simmer for about 10-12 minutes, or until the pasta is al dente.
  • Once cooked, season with salt and pepper to taste, and serve hot.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. You can also freeze portions for up to three months. When reheating, add a splash of water or broth to help revive the dish’s consistency.
