  • 4 ears sweet corn Fresh corn delivers exceptional flavor, but frozen works well in a pinch.
  • 1 cup sour cream Swap Greek yogurt for a healthier twist.
  • 1/2 cup mayonnaise For a lighter dip, reduce the amount.
  • 1/2 cup cotija cheese Feta can substitute if you're in a bind.
  • 1 large fresh lime Adds bright acidity; fresh is better than bottled.
  • 1 tbsp chili powder Adjust to taste for spiciness.
  • 1/4 cup chopped cilantro Optional; omit if not to your taste.
  • Salt and pepper Essential for flavor enhancement.

Preparation

  • If using fresh corn, carefully cut the kernels off the cob. If using frozen, let them thaw.
  • In a large mixing bowl, blend the sour cream and mayonnaise until smooth and creamy.
  • Stir in the lime juice, chili powder, and half of the cotija cheese. Mix well.
  • Gently fold in the sweet corn until it’s evenly distributed throughout the dip.
  • Add salt and pepper to taste, and stir in the cilantro if using.
  • Let the dip sit in the fridge for at least 30 minutes before serving to allow flavors to meld.
  • Serve cold, topped with the remaining cotija cheese.

Notes

For variations, add diced jalapeños for spice, or substitute herbs. Best served fresh, but leftovers can be stored in an airtight container for up to 3 days.
