For Assembly

  • 8 pieces Tortillas, corn or flour The vessel for the filling.
  • 1 piece Avocado, ripe Adds creaminess to the tacos.
  • 1 piece Tomato, diced Adds freshness and color.
  • 1/4 cup Red Onion, finely chopped Provides a hint of sharpness.

Instructions
 

Preparation

  • In a bowl, combine shrimp and taco seasoning. Toss well to coat every piece.

Cooking

  • In a large skillet over medium heat, add olive oil.
  • Add shrimp to the skillet, cooking for 2-3 minutes on each side until they turn pink and opaque.

Making the Salsa

  • In a separate bowl, combine diced avocado, tomato, red onion, cilantro, and lime juice. Gently mix together.
  • Season with salt and pepper as needed.

Assembling Tacos

  • Warm your tortillas briefly in the same skillet or in a microwave.
  • Spoon the shrimp into the warmed tortillas, top with avocado salsa, and sprinkle with additional cilantro if desired.

Serving

  • Serve the tacos with some lime wedges and enjoy!

Notes

For extra crunch, bake tortillas into taco shells. You can swap shrimp with grilled chicken or veggies.
