Ingredients

Meat and Vegetables

  • 1 lb ground lamb or beef You can swap in turkey for a lighter option
  • 2 cups mixed vegetables Carrots, peas, and corn bring color and sweetness; feel free to use frozen for convenience
  • 1 medium onion, finely chopped A great base for flavor
  • 3 cloves garlic, minced For that aromatic kick
  • 1 cup beef broth Homemade or store-bought, whatever you have on hand
  • 2 tablespoons Worcestershire sauce For depth and richness

Mashed Potatoes

  • 4 large potatoes, peeled and diced Golden Yukon potatoes work beautifully here
  • ½ cup milk Or cream for an indulgent touch
  • 3 tablespoons butter Because everything is better with butter
  • Salt and pepper to taste
  • Fresh herbs like thyme or rosemary For a garden-fresh twist (optional)

Instructions

Preparation

  • Start by boiling the diced potatoes in a large pot of salted water. Cook until fork-tender, about 15 minutes.
  • In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic and cook for another minute. Next, add the ground lamb or beef and brown the meat until fully cooked.
  • Season with salt, pepper, and Worcestershire sauce.
  • Mix in the mixed veggies and beef broth. Let the mixture simmer for 5 minutes.
  • Once potatoes are fork-tender, drain and return them to the pot. Add the milk, remaining butter, and a pinch of salt. Mash until creamy and smooth.

Assembly and Baking

  • Preheat your oven to 400°F (200°C).
  • In a baking dish, spread the meat and vegetable mixture evenly on the bottom.
  • Spoon the creamy mashed potatoes on top, spreading them to cover the meat completely.
  • Bake for about 25 minutes, or until the top is golden brown and crispy.
  • Allow the pie to cool for a few minutes before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, bake in the oven at 350°F (175°C).
