Preparation

  • Preheat the oven to 400°F (200°C).
  • Slice the chicken breast, bell peppers, and red onion into thin strips.
  • In a small bowl, whisk together chili powder, cumin, garlic powder, salt, and pepper to make the fajita seasoning.
  • On a large sheet pan, combine the sliced chicken, bell peppers, and onion. Drizzle with olive oil and sprinkle the spice mix. Toss until evenly coated.

Cooking

  • Place the sheet pan in the oven and roast for 20 minutes until the chicken is cooked through and the peppers are slightly caramelized.
  • Warm your tortillas and set up toppings for serving.

Notes

For extra spice, consider adding cayenne or jalapeños. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for 2 months.
