Preparation

  • Preheat your oven to 425°F (220°C) to ensure a crispy finish on your potatoes.
  • While the oven heats, wash and chop the potatoes into bite-sized cubes. Trim the green beans and cut them into roughly two-inch pieces.
  • In a large skillet, heat a drizzle of olive oil over medium heat. Add the sliced sausages and cook until browned and cooked through, about 5-7 minutes. Remove them from the skillet and set aside.
  • In the same skillet, add another splash of olive oil, followed by the sliced onion and minced garlic. Cook until fragrant and translucent, about 3-5 minutes.

Combining and Baking

  • In a large bowl, toss the cooked sausage, potatoes, green beans, sautéed onion, garlic, paprika, salt, and pepper together until everything is nicely coated.
  • Pour the mixture into a greased baking dish, spreading it out evenly.
  • Place the dish in the preheated oven and bake for 30 minutes, or until the potatoes are tender and crispy, and the green beans are perfectly cooked.
  • Once out of the oven, let it cool for a few minutes. Sprinkle with cheese or fresh herbs on top if desired.

Notes

Consider using turkey sausage for a lighter option. Seasonal twists can include adding carrots or butternut squash in fall, or asparagus in spring. A splash of balsamic vinegar before baking adds a delightful tang.
